What is spicy tuna, and how does it differ from other types of tuna?

Spicy tuna is a popular Japanese sushi dish composed of diced sashimi-grade tuna, spicy sauce, and optional flavorings including green onions and sesame seeds.

Spicy tuna can be served in a variety of ways.

  • Sushi rolls or hand rolls have a variety of fillings inside them.
  • As a canapé, serve with cucumber slices and fried wontons.
  • As a snack or a quick, light lunch, stuffed into an avocado half
  • It can also be served as an appetizer, stuff it into a summer or spring roll.

So, what exactly is a spicy tuna bowl?

A spicy tuna bowl is just a deconstructed spicy tuna sushi roll. A tuna bowl can include fresh veggies and a variety of sauces, such as eel sauce, and is made with spicy tuna served on top of sushi rice.

Spicy tuna raw or cooked?

Raw tuna is used to make traditional spicy tuna. If you do not want to consume raw fish, you may always “Westernize” it by using cooked tuna or flakes tuna from a can.

Ingredients 

  • 8 oz. Sashimi Grade, sliced into 1/4 to 1/2 inch cubes (it is easiest to dice tuna from a frozen state)
  • 1 1/2 tablespoons Sriracha
  • Chili Oil (1/2 tsp)
  • Sea salt
  • Masago (Capelin Roe): 1 1/2 tsp 
  • 3 scallions, finely sliced, white and green sections separated
  • 1 teaspoon sesame seeds (toasted if possible) (I used a combination of both Black & White sesame seeds)
  • Mayonnaise with spice
  • 2 tbsp Mayonnaise (Japanese) (preferably Kewpie brand)
  • 2 tbsp Sriracha (or to taste)

Preparation of material

  • To make the spicy tuna sauce, combine Sriracha, chile oil, and a touch of salt in a medium mixing bowl. Stir everything together thoroughly. In a mixing dish, combine the tuna, masago, white sections of the scallions, and sesame seeds. Mix everything gently.
  • Make the Spicy Mayonnaise: In a small bowl, combine the mayonnaise and sriracha. To combine, whisk everything together thoroughly. Taste and add additional sriracha if desired to increase the spiciness.

Spicy tuna rolls Recipe 

  • Spread about 1/4 cup on one side of a nori sheet, shiny side down, on the mat.
  • Spread the rice out flat on the sheet with your fingertips, covering about half of it.
  • In the center of the rice, lightly sprinkle a line of spicy tuna mixture.
  • Begin rolling by grabbing the bamboo from both ends of the nori sheet.
  • Roll it tightly enough to make the rice feel snug, but not so tightly that the tuna mixture leaks out the ends. Roll until only a few sheets of nori remain.
  • Wet your fingers and run them along the nori sheet’s edge lightly. Roll till the mat is removed.
  • Cut the roll in half with a sharp knife that has been dampened. If you want the roll to look neater, cut it into bite-size pieces and chop off the ends.
