How do you make California rolls?
Crab and avocado are common additions to California Rolls. A California sushi roll is usually rolled inside-out containing cucumber, crab, or imitation crab and avocado. The outer layer of rice is an inside-out roll. It is sprinkled with toasted sesame seeds. These are typically wrapped with seaweed. These are the rolls in which vinegared rice forms the outside of the roll. Mayonnaise can be added as an optional.
Cucumbers are also a favorite. Some people also like to apply flying fish roe on the rice, which gives the roll a brilliant orange color due to the food coloring used. Instead of flying fish roe, you can also prefer toasted sesame seeds, which add additional flavor to the roll.
Sushi Rice: Ingredients
- 2 Cups of short or medium grain rice.
- 2 And a 1/2 cups cold water* 5 tablespoons sushi vinegar (make your own sushi vinegar by combining the following three ingredients and blending them over low heat on the stove, then letting the mixture cool):
- Rice vinegar, 4 tbsp.
- Sugar, 2 tbsp.
- Salt, 2 tsp (I used sea salt).
California Rolling Ingredients
- 1/2-Pound crab imitation meat (p.s. the “log” shaped crab flesh is the simplest to work with).
- 1 Ripe but firm avocado.
- Peeled and cut into long julienne strips half a medium cucumber.
- Nori Seaweed (toasted).
- Lightly toasted sesame seeds.
A sushi rolling mat, as well as plastic wrap to protect the mat. Use parchment paper instead of a sushi mat if you do not have one.
Dip/Sauces for California rolls
- ketchup (regular or low sodium).
- Wasabi paste or powder are two different types of wasabis.
- To make spicy mayo, combine the following ingredients in a mixing bowl. 1 tbsp mayonnaise, 1 tsp Sriracha hot chili sauce.
- Combine rice and water in a big pot and set aside for 30 minutes. Bring the water to a boil. Reduce heat to low, cover, and cook for 15-20 minutes, or until rice is soft and water has been absorbed. Turn off the heat. Cover the pot and set it aside for 10 minutes.
- Meanwhile, put the vinegar, sugar, and salt in a small basin and stir until the sugar is completely dissolved.
- Drizzle the vinegar mixture over the rice in a large, shallow bowl. Stir the rice to cool somewhat with a wooden paddle or spoon in a slicing motion. Keep it moist by covering it with a damp cloth. (You can make the rice combination up to 2 hours ahead of time and keep it covered in a damp towel at room temperature for up to 2 hours.) Refrigerate only if necessary.)
- Set aside a platter with roasted and black sesame seeds. Place a sushi mat on a work surface and roll it away from you, then wrap it in plastic wrap. Using plastic wrap, place 3/4 cup rice. Press rice into an 8-inch square using dampened fingers. 1 nori sheet is placed on top.
- Take a bamboo sheet to give support to the rolls. Place a dry sheath of seaweed on it. Now grab rice, place it in the center of toasted seaweed, and spread the rice gently across seaweed from one end to another. Spread the rice evenly. Then flip the seaweed in such a way that the rice layer comes on the upper side.
- Cut the cucumbers julienned. Add these julienne cucumbers. Then place avocado on it . Now place the sticky crab or imitation crab on them.
- Spread everything evenly. Now sprinkle the toasted sesame seeds on top of it. Now move the bamboo sheet gently and roll it with the rice. Make a layer of a roll now gently pull the bamboo sheet making sure that the rice didn’t fall out. Then Move the sheet and take turns until it is completely rolled. Now gently press the bamboo sheet to stick rice with the seaweed. Remove the bamboo sheet. There comes a California sushi roll.
- Now cut the roll with a sharp knife to make pieces of it and enjoy.
